Cutlet or deep-fried snacks are a popular choice in Indian cuisine and are appreciated by all age groups. Typically it is prepared with a combination of vegetables or meat options to make a crisp and crunchy snack. It comes in different types and sizes which eventually derives its name and one such crisp and crunchy snack recipe is the veg fingers recipe.
I have always been a huge fan of deep-fried snack recipes and cutlet or finger foods are my personal favourites. Previously I was posting quite a few snacks recipe frequently on my blog, but I have reduced it. This is mainly towards focusing on healthy recipes. Therefore, I have started to post more on steamed or pan-fried snacks compared to deep frying. Yet there are certain snacks which require deep frying and veg fingers are one such classic snack. As I was explaining earlier, it is basically an extension to the cutlet recipe but shaped like a finger and coated with breadcrumbs. Generally, the cutlet recipes are coated with rava but breadcrumbs are a must for these fingers recipes. It is because it gives it a crisp golden colour and thus with its shape making it an attractive snack.
Furthermore, some more additional tips, suggestions and variants to the veg fingers recipe. Firstly, adding vegetables is completely open-ended and you can easily experiment or add as per your choice. I have added basic vegetables, but you can add exotic or even leafy vegetables as per your taste, choice and preference. Secondly, these fingers can be easily deep-frozen and can be used whenever you need them. I have shown in the video how to deep freeze them in a zip lock bag, but you can freeze them in an airtight container too. Lastly, if you prepare it immediately, I would heavily recommend double coating it with breadcrumbs so that the veggie mixture does not ooze out while deep frying.

Ingredients
for veggie mixture:
- 2 tbsp oil
- ½ onion, finely chopped
- 2 chilli, finely chopped
- 1 carrot, chopped
- 3 tbsp sweet corn
- 3 tbsp peas
- ½ capsicum, chopped
- 2 potato, boiled & mashed
- ½ tsp chilli powder
- ½ tsp cumin powder
- ½ tsp garam masala
- ½ tsp pepper powder
- ½ tsp chaat masala
- ½ tsp chilli flakes
- ½ tsp mixed herbs
- ½ tsp salt
- ¼ cup breadcrumbs
for slurry:
- ¾ cup corn flour
- ¼ cup maida
- ¼ tsp pepper powder
- ¼ tsp salt
- ¾ cup water
other ingredients:
- panko breadcrumbs, for coating
- oil, for frying
Instructions
firstly, in a pan heat 2 tbsp oil. add ½ onion, 2 chilli and saute until the onions soften.
now add 1 carrot, 3 tbsp sweet corn, 3 tbsp peas and ½ capsicum. saute until the vegetables turn crunchy.
cool completely, and transfer to a large bowl.
add2 potato, ½ tsp chilli powder, ½ tsp cumin powder, ½ tsp garam masala, ½ tsp pepper powder, ½ tsp chaat masala, ½ tsp chilli flakes, ½ tsp mixed herbs and ½ tsp salt.
squeeze and mix well making sure everything is well combined.
now add¼ cup of breadcrumbs and prepare a soft non-sticky dough.
to prepare the slurry, in a bowl take ¾ cup corn flour, ¼ cup maida, ¼ tsp pepper powder and ¼ tsp salt.
add¾ cup water and prepare a smooth lump-free batter.
now shape the veggie mixture into finger-sized.
dip in corn flour slurry and coat with panko breadcrumbs.
you can deep fry immediately, or freeze in a zip lock bag for up to 2 months.
stir occasionally, and fry until the fingers turn golden brown and crispy.
drain off over kitchen paper to remove excess oil.
finally, enjoy veggie fingers with tomato sauce.

- firstly, if the fingers are breaking while frying, it means there is too much moisture in veggie mixture. so it is better to freeze for at least 30 minutes before frying.
- also, coating with breadcrumbs makes fingers extra crispy and tasty.
- additionally, add vegetables of your choice to make it look attractive.
- finally, veggie fingers can be frozen for up to 2 months in a zip lock bag.
