Last week was our youngest daughter's birthday and we had planned on going to Miller & Carter. As we are in lock-down I boldly said I'd recreate her Steak dinner, I mean how hard could it be? She told me she always had their onion loaf but it wasn't like a bread loaf...now I've never been to Miller & Carter so I had no idea about their Onion Loaf so had to do some research and devise my own recipe. Fortunately my daughter was very impressed stating it was almost identical! Phew! I will list the other component part recipes to the whole plate separately otherwise this will be a very long post! Ingredients

6 mini loaves

  1. 2

    large onions, skins and first layer removed, sliced into thin rings and separated

  2. Table salt

  3. 1

    egg

  4. approx. 1 tbsp plain flour

  5. Paprika

  6. Ground White pepper

  7. Rapeseed Oil

Cooking Instructions

  1. 1

    Heat the oven to 180 degrees C.

  2. 2

    Place the separated onion rings into a large bowl.
    Generously sprinkle with salt. Stir and sprinkle over more salt. Set aside for 30 minutes to wilt and soften.

    Rinse the onions under cold water to remove the salt and drain. Tip onto a clean tea-towel and pat dry.

    Tip back into the bowl and sprinkle with Paprika, stir to coat.

    Beat the egg and mix into the flour, along with the milk to make a thick batter.

    Stir the batter into the wilted, dry onions to coat them well.

    Heat Rapeseed oil to a depth of 2 cm in a large, deep pan to approx. 190 degrees C. Test the oil temperature with one piece of onion, it should rise and brown after 1 minute.

    Take a large tablespoon of the onion batter and carefully drop into the pan of hot oil. Depending on the width of the pan you should be able to cook about 2 or 3 at a time. Cook for a few minutes until browned on the underside and once a golden brown colour flip over to cook the other side. Drain on kitchen paper.

    These can then be eaten as they are or, to to make them into mini loaves, use a mini-loaf-pan tray, packing one fried onion “cake” into each depression ensuring it is pressed into the corners to form a loaf and then bake for 10 to 15 mins. You could also make round ones using a bun-tray in the same way.

    These will keep in the ‘fridge, covered for a few days or can be frozen. (Lakeland make a good 12 pan mini loaf-pan tray)

approx. 75ml milk
approx. 1 tbsp plain flour,This would make a very thin watery batter, and not the thick one your hoping to get, as in the.method notes, are there's measurements correct??
