I have a serious sweet tooth as do my girls and I need a little chocolate fix to keep me going throughout the day. As I've been trying to eat clean for the past couple of weeks I thought I would make some healthy chocolate rice crispy cakes then the kids could eat them too. These are such a great alternative to regular rice krispie treats.
Ingredients
- cacao powder
- maple syrup
- coconut oil
- almond butter
- rice crispies

These treats are made from simple ingredients readily available at the grocery store. Thecacao powder, almond butter,maple syrupandcoconut oilare much better for you than a traditional version of chocolate rice crispy cakes. If you were feeling more virtuous you could swap the rice crispies for puffed quinoa. If you are vegan check that the rice crispy cereal that you use is suitable for vegans - some are fortified with non vegan Vitamin D. The almond butter provides some healthy fats and these healthy chocolate rice crispy treats contain no refined sugar.
Instructions
- Melt all the ingredients except the rice crispies together in a saucepan on a medium heat until melted and mixed.
- Put the rice crispies in a large mixing bowl and pour in the melted chocolate mixture. Stir until they are all nicely coated.
- Scoop intosilicone ice cube traysand freeze.
- Pop one out whenever you need a little sweet treat.
Top tip: Use a rubber spatula or silicone spoon to stop the mixture from sticking as you stir it together.

- 6 tbsp maple syrup
- 5 tbsp coconut oil (we use Vita Coco)
- 2 tbsp almond butter
- Rice crispies
Instructions
- Melt all the ingredients except the rice crispies together in a saucepan until melted and mixed.
- Stir into rice crispies until they are all nicely coated.
- Scoop into silicone ice cube trays and freeze.
- Pop one out whenever you need a little sweet treat.
